Spirit of Wallonia

Our FM Brussels SUmmer Series has taken us to a spot that I have passed by numerous times although I have lived in Brussel for quite some time.

Spirit of Wallonia is a multi functional space just next to Grote Markt. It’s a space where you can find all the brochures if you feel like crossing the language barrier and venture into Wallonia. There is also a art gallery with monthly changing shows and above all there is a shop where you can find all sort of interesting Wallonian products.

I found an interesting selection of Belgian wines from the Valléée de la Meuse et Sambre, an award winning vodka called Cosmic and the array of abbey beers.

Even better are the selection of vinegars, candies and syrups. The variety of ‘Sirop de Liège’ with pears and apples (or both) are quite extensive. Cuberdons from Seraing can also be purchased here. Seraing is one of 3 places in Belgium where the cuberdons have the ‘Streekproduct’ label, so they are the real thing! Just make sure they aren’t older than 6 weeks otherwise they aren’t at their best.

If you feel like a bite to eat, then just pop downstairs and try the restaurant. Of course they only use Wallonian products in the kitchen, so well worth a try we think!

We bought cuberdons and Sirop de Liège.

For cuberon ice cream follow these instructions:
Take 5 cuberdons and melt them down (either in a bain marie or microwave) and put aside. Mix 4 eggs (yellow only) with 100 gr sugar. Put everything in your pan and heat up. Add 40 cl of milk by stirring constantly to avoid curdling. Add the melted cuberdons and a good dollop of crème fraiche. Fill your ice cream maker and voila!

The Sirop de Liège, I often use in a marinade for bbq meat. So mix some syrup with olive oil and a pinch of pepper and salt. Add some brown abbey beer and lots of chopped coriander. This is a prefect coating for your chops, kebabs of either chicken or beef. Quantities really depend on your personal taste so feel free to experiment, you can’t really go wrong with this.
