      Mandarin, chicken liver parfait & grilled bread
      So basically it’s a paté with a thin skin of citrus jelly around it. Rather uncanny how the layer of jelly resembles a real skin of fruit! Gives a bit of ‘zzing’ to the flavours. In the sixteenth century they used to find it amusing to have a ‘surprise’ like that on their plate. And guess what: it’s still amusing 🙂
