Mime’s Fig Jam recipe

I used white figs from the centenary fig tree in our garden in London – which was feasible thanks to the warm spring this year. I love the caramelised purple color coming off figs from the South of France and the tang from the lemon is a great combination. These jams are great just on toast, with cakes, yoghurt and fromage frais!
